Both words mean people who are hired to do household work, however, "maid" is used only for women, while "servant" is gender neutral

As nouns the difference between servant and maid

 is that servant is one who is hired to perform regular household or other duties, and receives compensation as opposed to a slave while maid is (dated|or|poetic) a girl or an unmarried young woman; maiden.

As a verb servant

 is (obsolete) to subject.

A maid is hired and can leave and go home anytime she wants to. A servant is indentured and owned by his/her Master or Mistress and cannot leave unless the Master or Mistress says so.
